I'm thinking about replacing the Momo wheel on my Spider with a Nardi Classico. Does anyone know if the hub adaptors are interchangeable?

The one you show has two series of holes on different diameters. That's how it adapts to both brands of steering wheels. Original Momo adapters only have holes for the Momo bolt circle.

There are some adapters available. Amazon.com: Nardi-Personal Adapter - Black - Fits 6 Hole Hub Adapter (Boss) Kits with a 70mm Bolt Pattern and 6 Hole Steering Wheels with a 74mm Bolt Pattern - Part # 4300.00.0002: Automotive
I just checked a Momo adapter and its circle is 70 mm. I do not have a Nardi wheel but from the net its circle would be 74 mm, so this could be just what you need.
