I really want to buy some Cromadora rims,
for my 71 GTV. I think I would like to
run either 185/70's or 195/60's.

My question is what offset should the rims
have so that not to much tire hangs out of
the wells? I would like the tires to be pretty
much inside the wells if possible without any rub.

if it were between the two tire sizes you have listed, i'd go with the 195/60. this is what i once did and it looked good...14x6 cromadora, 205/60, 1/2 spacer. i THINK the offset is 26? someone know for sure what offset it is?

Wheel Offset/Chromadora

According to the IAP catalog, Chromadora's are available in both 30 and 23 mm offset. The 23's would present the most likely interference problem. However, I run 195/60-14 Azenis' on 18 mm offset 6" (Milla Miglia) rims on my '69 GTV every day with no problem at all (no spacers). I have also run 205/55-14 Kuhmo's on some 20 mm offset Enkie rims on the same car at the track and had no problem. However, if I try the same Kuhmo arrangement on my '65, I get interference at the rear because of the different rear wheel arch on the drop-nose coupes.
