The clutch actuating levers (the one the slave cylinder pushes to disengage the clutch) on my 1969 and 1973 Alfa GTVs both have a hole at the end. Is there supposed to be a spring attached to the lever? If so, what are the specifications of the spring and to what does the other end attach?

No spring on the outer end!
Right! Earlier design slave cylinders needed a spring on the T-O fork - hence the hole. When the hydraulics were re-designed, the hole was never removed from the T-O fork. So you can ignore it.
