I am thinking about changing the stock (original) spark plug wires with the high performance red Magnecor ones, and replacing the coil on my 1991 164S.

Is there anything that's complicated about this process? It doesn't look too hard. I'd appreciate any feedback on this from the experts before I dig in - thanks!

Easy, but I don't think you will see any change in performance if that's what you are looking for. OEM works just fine.

Yeah, replacing old plug wires isn't a bad idea, but there's nothing wrong with OEM on the V6.

The main way to screw up the job is to get the order of the wires wrong, so just be sure to keep everything straight. Personally I always draw a little picture of the distributor with the plug numbers labeled and then recheck things about three times after reassembly. Also don't mix up the two connectors at the coil.
