I know 2 out of 3 isn't bad but I do honk with the left button.
I tried a search to no avail so I'm putting it out there ...

Button on the left doesn't work. Before I remove the steering wheel does anyone have any suggestions for what I should look out for please
I ASSume that it's the same ring that the three buttons should share but this car is Italian after all.

Yes, that is a good assumption. Just look at the backside of the wheel - you will see that the three horn "buttons" are all tied into the same piece. I guess your best option is to disassemble, clean, inspect, reassemble, hope.

Have you pulled your wheel before? The only two tricks are:

1) You will need a steering wheel puller. Brute force, gear pullers, hammering on the shaft won't work.
2) Be very careful removing that black plastic hub at the center. It is held on with three brittle plastic "fingers" that will snap off at the least provocation. You might try to pry it back a bit and squirt some silicone in there to allow the fingers to slide off the metal part more easily.
