    What doesn't make sense, unless I missed something, is if the fans are running, the engine should not overheat. So there seems to be some type of blockage in the hoses or coolant is not flowing as it should.

    Maybe you should ensure the ground lead from the battery to the body is electrically sound, i.e. make sure the bolt/nut where the wire attaches to the body in the trunk is tight and the there is not corrosion or paint at that point.
