Dash board out, what should I "Might as well" do

Title says it all. I've had to take my dashboard out, what are the "Might as wells" for an 86 Alfa Romeo Spider that you should do once you have complete unfettered access to the back of dash area....

What is this hose in driver's side fender

What is this hose (see image) and is it hard to replace? Do I have to replace or fix it? I found it when I removed the inner lining to get at some rust I'm trying to repair on my 86 Spider.

How many Spider owners out there have A/C in their cars and use it? How many don't have A/C and wish they did? Have you ever removed A/C from a Spider and not regretted doing so? That is the dilemma...

Thanks everyone for your replies. What you say about 200hp makes sense. And with less HP the car is less likely to try and kill you. And it's a lot easier on the pocket book.

Hi, My name is Al. I live in central NJ and own a red 1986 Spider Graduate which I purchased from my Brother in law. I have just begun restoration and hope to at least have it on the road this summer.
