The hose connection at the base of your dipstick was the point where the Oil Vapour Separator drained the recovered oil back to the crankcase.
Not sure what gear shift knob you got...you may need to screw back a metal band to uncover the allen key set screws that hold the knob to the shaft. Knob is not threaded.

Newbie With Questions
I am new the the Alfa community and was wondering if I can get some help with some questions.
1- Where do you but parts? I can't even find some who carries an air filter
2- At the base of my oil dip stick there is a bleeder hose coming off it, is this normal and what does it do?
3- How do you get the gear shift knob off? tried to pull it off as suggested but still no go
