The cars have much greater cornering and braking potential coz they have much more rubber on the road. That's why you see the F1 or other race cars routinely beat bikes around a track, despite the bikes often having superior acceleration.
I'll be checking out the OZ Moto GP this weekend...in daylight hours, for a change. The Philip Island track has a long enough straight to ensure there's tons of slipstreaming and place-swapping action, especially in the smaller-engined classes.
