To complete the answer to your initial question; the wires run thru the hollow steering column and exit below the steering gear-box as pictured in Alfabits great pic:

Not knowing anything about how Webers work, I spent the past few days doing research online, trying to understand what makes them tick and how they in turn affect our engines. My copy of Pat Braden's book is due to arrive tomorrow from Amazon.
I also found this incredibly detailed and useful webpage on theory and tuning of the DCOE, written up by a female TR3 owner, TeriAnn Wakeman - it's a great read for novices like me:

I also learned that "DCOE" stands for Doppio Corpo (double throat) Orizzontale (horizontal) E... (diecast).
A separate webpage claims that 1300 and 1600 Veloces ran 40DCOE2s; which Giuliettas then ran the DCO3s, that are supposedly so desirable for the purists?

Patrick,
All the 750 Veloce's used them. Remember though, ALL was not that many. These carbs had sandcast bodies, and did not work as well as the 40DCOE's. Many of the early 750's had them removed and replaced by the DCOE's. The manifold, and throttle linkage, + water tube, made this a complex assembly. Back in the day if one wanted the 750 Veloce to really run nice, many of the DCO's, manifolds and all were replaced, with the Veloce parts from the "new" 101, 1300. I probably did half a dozen such "updates" in the early '60's. Today, everyone wants the cars original, so there is a big demand for the complete assemblies, as there were not a lot of them to begin with. I should have saved all those I removed, but then, who knew?  Gordon Raymond

More Progress
Another day at Glenn's, and more work accomplished.
Since we finished the Webers last weekend, we finally started on the engine itself today. It looks like a mess on the outside, gunked up by oil from God-knows-what-leak(s) over the years. Glenn said at first sight of the car that this was the dirtiest 101 underneath that he'd ever seen - I believe him - not too well taken care of previously, apparently.
In any case, we're leaving the block alone and working on the head first. The head had already had a valve-job at Jon Norman's before I bought the car, so it was quite ready to receive a cleaned-up manifold. The manifold seems to be from a Super, but it fit fine. We bead-blasted then wire-brushed the manifold, and finished by sanding the ports so air can rush through at 200 mph  . Glenn sanded the older carburetor rubber adaptos(?) and we bolted everything together. If it weren't for our ultra-lengthy lunch-break (yakking about the Alfa community in general, and the sun was out for a balmy 60+ degrees in the shop's backyard), we probably could've finished in less than two hours. Part of the fun, wasting time and getting nothing much done.

Good to see you are making progress. Can I ask you about the decals that you are showing, are they repros of originals that were included on your car? Does Bill make sets for 750's (if they were different)? And lastly, can you share contact info for him?

I can give you some info on Bill Gillham. He can provide quality decal reproductions for most older Alfa models including the 750. He puts together a kit based on your components. He can be reached at hooligan@proaxis.com.
Here is a shot of the jack decal on my restoration.
