I think you need to find a good independent (non-dealer) body shop and see if they can do the work. You might need to shop around a little since a lot of shops are only into insurance crash repair and finding someone who can do old fashioned hammer and dolly straightening might be a challenge. But they are out there, if you can find them.

Usually when door skins are removed for replacement the edges are ground off. The new skins (if they were available) would have partial folds where the skin over laps/attaches to the frame.

I think removing the current door skins and trying to re-install them would likely cause more damage.

An auto restoration shop would be more likely to be able to repair the doors vs a body shop that does mostly new cars.

I'm not sure what kind of damage your doors have. I've had good results with Paintless Dent Removal to get rid of door dings in my doors. If the damage is more severe I'm sure a good body shop should be able to strip the inside of the door and repair it. You'll probably have to repaint the doors, which will add to the cost, but the body shop will then be able to drill a small hole into the door skin and pull it out if necessary. Do you have photographs of the damage? It would be interesting to see what repair is required.
