Now this is completely different from asking for somebodies help, ie. how was it done originally?, or I can't work something out ... etc.
Thus this site like ALL automotive sites is great for helping you out, but opinions ... hmmm, well lets just say we are all passionate with our views

I think this, along with suggestions by many to see if you can test drive 1750 and 2L GTVs is the best. I've owned a 67 1600 with webers, a 73 2L and now a 69 gtv, both with Spica. Each had its own unique character. I like the 69 the best. Alas, my 1750 engine died and at the time it was cheaper to rebuild a 2L and so that is what I did (should have asked to keep the 1750 engine). The only noticable difference to me was in stop and go traffic where the 2L was quicker and the ability to pull in 5th gear longer than with the 1750. The webers on my 1600 were a nightmare (constant fiddling required) compared to the Spica and for a nice read on how potent and reliable the Spica is, check out Wes Ingram's "bible" on adjustments and ways to make it very competitive for street/racing.
It does not take much time reading this great BB to know that members are passionate, and sometimes go overboard. I've seen threads that start out with a discussion of the new 8C evolve (devolve) into discussions about the world trade center and Iraq!
I'm intrigued by the idea of restoring a car by committee. I'm sure Pete is correct that it is impossible. But it would be interesting to do a poll somewhere where we try it. Maybe with several categories:
1. Looks-exterior
---stepnose or not?
---color?
---2 headlights or 4?
---grille treatment?
---tailights/markers
---wheels/tire sizes
2. Looks-interior
---dash?
---console?
---seats?
3. Engine
---size
---Fuel delivery system
4. Handling/Suspension/Steering
5. Other?
Although we would have a lot of opinions, it would be interesting to see what kind of monster would result if we took the majority view on each point. My own guess is that it would look/perform most like a 1969 1750 GTV!
