Whoa,
Lets take this thing down a notch. We are supposed to be having fun. So lets get back to that restoration. It sounds like you're all sorted on the engine but let me suggest something you might want to try. If you can go to a local club event and get a ride in a 1750 or better yet see if someone will let you drive theirs. This is definately not an engine that you have to rev the crap out of. It drives well and easy in stop and go traffic. No one likes stop and go or frequent lights but the 1750 will be no different than the 2L in these situations.

It sounds like you have made up your mind but I mention this because of my experience with modifications. My 3-4 day a week driver(can't quite call it a daily) is also 1969 1750gtv and I started by doing various mods to replace worn out parts. As time went by and I got familiar with the car I started to realize that the original parts were actually better. This was especially true with headers/exhaust system but I could go on and on about others stuff as well. This was really quite a revalation as my other classics (BMW 2002,mini,etc) needed the mods to compete with modern traffic and were major improvements over what came on the car originally. Alfas and in particular the GTV doesn't suffer from these problems as it was very well designed. In fact the GTV is far more comfortable, relaxing, and easier on the body on long trips than my 1998 BMW. Amazing but true, my Girlfriend often requests that we drive the Alfa on long trips because of the comfort factor. It also gets better mileage!! But I digress the point I'm trying to make is that these cars don't really need modifications to be fun and easy going drivers unlike most classics. You will be much happier if you try to stick with original parts. Regardless these cars are a blast and I'd like to say welcome to the Alfa cult.
